Trim the fat from the beef. Thinly slice across the grain into bite-sized strips then coat with paprika. In a small mixing bowl stir together the sour cream/greek yogurt, flour, and tomato paste. Stir in the broth and pepper. Set aside.
Cook the noodles per package directions. Omit any oil. Drain well.
Meanwhile spray a large skillet with nonstick spray. Preheat over medium heat. Add the onion, garlic and cook until onions are tender about 3 minutes. Stir in the strips of meat and cook for another 3 minutes. Add the mushrooms, cover and simmer for 5 minutes.
Add the sour cream/greek yogurt mixture to the skillet. Cook and stir over medium heat until thickened and bubbly. Serve meat mixture over the noodles.
